Creating a nutritious powder from sprouted peanuts

Abstract

    Research on peanuts collected in Dong Thap, Vietnam showed that peanuts was sprouted for 2 to 3 days, the total polyphenol, total flavonoid content and antioxidant activity increased significantly [(3.64 ± 0.013) mg GAE/g DW; (0.84 ± 0.012) mg QE/g DW; (55.90 ± 0.535) % inhibited]. Peanut sprouted seeds are dried, finely ground, mixed with some popular and healthy ingredients to develop a nutritional powder. The results of the study showed two product formulas. Formula 1 (CT1) includes: sprouted peanuts (11 grams), oats (4 grams), almonds (1.5 grams), and walnuts (1.5 grams). Formula 2 (CT2) includes: sprouted peanuts (9 grams), green beans (3 grams), red beans (1.5 grams), black beans (1.5 grams), white beans (1.5 grams). Both nutritional powder formulas are good according to the TCVN 3215-79 product evaluation standards.
