Abstract

This paper presents the results of studies assessing the factors affecting the freezing time includes: air velocity, air temperature and product thickness, thereby building the regression equation establish relationships between freezing time with the factors affecting the foundation for selecting appropriate freezing regime of the
frozen pangasius fillet .
