Abstract

Alcohol has existed for a long time in human life and has become an object for the studies of the cuisine culture. Using seeds of the jackfruit to produce wine is considered as a new approach in the alcohol research. A kind of alcohol made from rice wine by the traditional method of distillation along with light natural scent of
fruits will bring an attractive choice to consumers. Besides, this technology uses inexpensive by products which can be found easily. It not only limits an amount of waste during processing but also enhances the economic value of the jackfruit. This result will open the potential for the production of spirits distilled from fruit seeds
containing much starch
