Abstract

Tyrosinase (EC 1.14.18.1) is a Polyphenol oxidase. It is a bifunctional enzyme catalyzingthe monohydroxylation of monophenols and the oxidation of diphenols. Tyrosinase catalysesmonophenols to L-DOPA· is a useful drug for Pakinson's disease. In food industry, tyrosinAseused as additives natural colorant. It can discover and treat phenol compound in environment. Accoding to Vogel' culture, we selected synthesis culture with cacbon source is glucose15 gil, trisodium citrat 3 gil, nitrogen source is pepton 0.5 g/l, NH4N03 2 g/l, initial pH 5 and acultivation time of 54 hous at 200 rpm and 30°C. Further studies are required to definitecharacterization of tyrosinase from A. oryzae TPI
