THE STUDY ON OBTAINING CRUDE PECTIN FROM POMELO PEELS

Abstract
The peels of pomelo contain high pectin content and can be utilized to extract pectin applied in food industry. In this study, the extraction conditions of pectin from pomelo peels were optimized to obtain high yield of pectin such as time, temperature and citric acid concentration. In addition, the purity and esterification degree of pectin from pomelo peels were also determined. The highest yield of pectin is 16.46% in the extraction conditions with 9% citric acid for 85 minutes at 90oC. The pectin product is of 49.43% purity with 51.15% esterification degree.
